‘Superfood’ is a marketing term to describe foods which have a very high nutritional content, are high in anti-oxidants and are beneficial for your health.  This salad is full of ridiculously tasty and nourishing things that will fill your tum and leave you feeling happy, satisfied  and unbearably self-righteous.

I could probably eat this every day for the rest of my life.

Superfood Salad – Serves 2

Utensils:
2 plates

Ingredients:
2 plateful’s of salad leaves – ideally with some rocket or spinach in it
1 avocado – peeled, stoned and chopped
2 good handfuls of cooked Puy lentils
1 small cooked beetroot – skinned and diced
1 small to medium carrot – grated
½ butternut squash – peeled and seeds removed then grilled, roasted  or steamed until soft – diced
1 good handful of pinenuts

Optional:  1 cooked chicken breast or a cooked salmon steak – roughly chopped

Method:
Divide all the ingredients between the two plates, arranging them attractively for added enjoyment
Drizzle with raspberry balsamic dressing

Raspberry Balsamic Dressing

Utensils
1 blender

Ingredients
60g fresh raspeberries
6g sugar
5 tablespoons  balsamic vinegar
2 tablespoons olive oil
8ml honey
2g salt

Method
Put the whole lot in a blender and store in the fridge

    up here at our local Lidl there is an utterly delicious and reasonably priced paella in a red plastic bag, i cannot remember the make, but it is utterly delicious. cost maybe say £2.20 and I get two good meals out of this, also v easy to digest for my poor tummy.

    on inspection ….. its got a Bremerhaven manufacturer/ supplier and i guess is made for Lidl. has whole mussels, the rice is good, cubes of exc tasting fish etc etc

    and as u say i cld eat that for the rest of my life … the times i’ve said that before !!

    they also have air cured ham, bargain for such apparent taste and quality.

    i’d better exlain…. that now with my poor stomach and for 22 years having beagles with me …..all that time I’ve seldom been in shops, especially food shops. my wife goes in but how/ why did she miss these gems ??

    Toffeeapple: Replace the squash with mango or papaya or cubes of tofu or pomegranite seeds…
